Register and a Cash Box. The CCards are run through Register. Checks and large bills and everything go in register. The cash box is for emergencies and is kept in a safe place. If you run out of Soda Pop from the fountain and that was last bottle, use petty cash to buy a few litres at grocery store and operations continue.
Some will try and sell you a CC machine, but call the Credit Card Cos that you honor and use and they will be happy to set one up.
Been a few years since I was in that biz, but old school still works.
